A municipality of the Alt Penedès, regarded as the capital of cava. It grew up around the old parish of Sant Sadurní de Subirats, within the barony of the castle of Subirats, and became an independent municipality in 1764.

The Codorníu family was already growing vines and making wine in Sant Sadurní by the mid-16th century: the company dates its origins to 1551 on the basis of a document inventorying presses and cellar equipment. In 1659 the heiress Anna Codorníu married Miquel Raventós, uniting two winegrowing lineages. Two centuries later, in 1872, Josep Raventós i Fatjó made on the estate the first bottles of sparkling wine by the traditional method with Penedès grapes, the wine we now call cava. When phylloxera reached the village in 1887 and devastated the vineyards, replanting on American rootstocks and the boom in sparkling wine turned Sant Sadurní into the capital of cava.
Alive today: Sant Sadurní calls itself the ‘capital of cava’: according to the Town Council, some forty local houses produce 90% of Spanish cava. Every September the Festa de la Fil·loxera re-enacts the plague of 1887 with fire and street parades, and Cavatast brings the producers together in autumn. Its Codorníu cellars, by Puig i Cadafalch, have been a listed monument since 1976.
